Oaty Blueberry Muffins

  
Ingredients:

  • 110g butter
  • 250g plain flour
  • 200g Soft brown sugar plus a little extra for sprinkling on top. 
  • 2 eggs
  • 125ml milk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 225g fresh blueberries
  • 50g oats some extra for sprinkling on top. 

Preheat oven to 180 C / Gas 4. 

Line a muffin tin with paper cases.

Sieve flour, baking powder and salt together and set aside.

Cream butter and sugar until light and fluffy . Add eggs and beat well. 

Add milk, the flour mix and the oats, beat until combined.

Fold in the blueberries.

Fill muffin cases 2/3 full. Sprinkle with a little oats and brown sugar and bake for 25 to 30 minutes.
