- 110g butter
- 250g plain flour
- 200g Soft brown sugar plus a little extra for sprinkling on top.
- 2 eggs
- 125ml milk
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 225g fresh blueberries
- 50g oats some extra for sprinkling on top.
Preheat oven to 180 C / Gas 4.
Line a muffin tin with paper cases.
Sieve flour, baking powder and salt together and set aside.
Cream butter and sugar until light and fluffy . Add eggs and beat well.
Add milk, the flour mix and the oats, beat until combined.
Fold in the blueberries.
Fill muffin cases 2/3 full. Sprinkle with a little oats and brown sugar and bake for 25 to 30 minutes.
